The Mighty Greek

 

Enjoy a delicious and mighty take on a traditional Greek salad with this recipe courtesy of ‘Eating Well’. This delicious salad features a variety of healthy diced vegetables, tangy dressing and protein-packed chickpeas. Here is what you will need for this recipe:

 

Ingredients:

 

  • ·      3 tablespoons nonfat plain yogurt
  • ·      3 tablespoons reduced-fat mayonnaise
  • ·      2 tablespoons lemon juice
  • ·      2 tablespoons chopped fresh mint
  • ·      1 clove garlic, minced
  • ·      1 teaspoon honey
  • ·      1/2 teaspoon salt
  • ·      1 medium zucchini, finely diced
  • ·      1 large red bell pepper, finely diced
  • ·      1 bunch radishes, finely diced
  • ·      1 15-ounce can chickpeas, rinsed
  • ·      4 large Boston lettuce leaves, for serving

 

To prepare the dressing simply whisk the yogurt, mayo, lemon juice, mint, garlic, honey and salt until creamy. Poor the prepared dressing over the vegetables and toss gently. Voila! This recipe can be stored for up to one day in the fridge.

 

Smokey Ham & Corn Salad

 

Nothing says summer like some crisp, sweet corn in your salad. This recipe combines fresh corn, diced deli ham and crunchy croutons with a smoky, creamy dressing that is still healthy. Follow along with us or check out the original recipe from ‘Eating Well’ here.

 

Ingredients:

 

  • ·      1/3 cup reduced-fat sour cream
  • ·      2 tablespoons distilled white vinegar
  • ·      1 teaspoon paprika, preferably smoked
  • ·      8 cups trimmed frisée, (about 1 large head) or 8 cups mixed salad greens
  • ·      1 medium tomato, diced
  • ·      1 cup fresh corn kernels
  • ·      1 cup croutons, preferably whole-grain
  • ·      3/4 cup diced ham, (about 4 ounces)

 

To prepare simply whisk sour cream, vinegar, paprika and salt in a large bowl. Add your frisée or salad greens, tomato, corn, croutons and ham. Toss to coat and enjoy!

 

Classic Tuna (or Chicken) Salad

 

This next salad is one that even the kids will enjoy as it combines a kiddie favourite with healthy vegetables wrapped up into one delicious salad. Metro grocery store is less than a ten-minute walk from Greenrock’s 11 Wingreen Court community and is the perfect place to get your groceries for all of the hearty salads mentioned in this article.

 

Ingredients:

 

·      2-3 cans of tuna (or chicken)

·      1 stalk celery

·      ½ yellow onion

·      2 heaping tablespoons of mayonnaise

·      Lettuce

·      Fresh dill

 

Open the can of tuna, drain it and place in a bowl. Finely chop some celery and onions and add to the tuna. Stir in a few tablespoons of mayonnaise, sprinkle with some freshly chopped dill and serve on a bed of lettuce. Voila! You can also serve your tuna salad on some bread or in a wrap for variety.

 

Mediterranean Chicken Salad

 

This is a great recipe for anyone with chicken leftovers. It combines fresh basil marinated tomatoes with artichoke hearts and fresh cheese. This recipe is provided by ‘The Clever Carrot’ and is available in full here.

 

Ingredients:

·      Basil marinated tomatoes (see website for more detail)

·      Leftover chicken (rotisserie or plain old chicken breasts will work)

·      1 jar of marinated artichoke hearts

·      1 can of white beans, drained and rinsed

·      1 large celery stalk

·      marinated bocconcini cheese

·      ¼ cup red wine vinegar

·      olive oil

·      herbs for garnishing (basil, parsley, chives, etc.)

 

Start by cutting last night’s chicken into bite sized chunks and add into a large bowl. Add the artichoke hearts, beans, bocconcini and sliced celery to the bowl. Add the basil marinated tomatoes and red wine vinegar, tossing until everything is evenly coated. Garnish with fresh herbs of your choice.
